I waited too long to pull the plug on obtaining good knives. I'll have one more to buy, the next size up from this one so I don't have to use the chef knife or this knife for cutting a large apple. They are great to handle, very sharp, and obviously well made. Glad I didn't keep waiting. My other knife was cheap and old and I couldn't sharpen it anymore. Very happy, but also now really paying attention because it is extremely sharp. I cut a lot of raw ginger and sometimes the knife would slip. I don't want that with this one. Handy knife with pointed blade: this Vegetable Knife / Small Boning Knife is ideal for fiddly bits of meat or hard-to-reach parts of larger vegetables. With this knife, precise cuts are possible where long blades or even hands could get in the way.
This is a fine little knife for detailed work. I only recommend this knife for people who already have a regular paring knife as this one has some limitations due to it's specialized design. As the name suggests, this knife is perfect for trimming sinew and fat from pieces of meat. I don't use it too often, but it serves a great purpose when I do need it. Interestingly, it is also my go-to knife to remove eyes on potatoes. I just jam that thin little tip right beside the potato eye, give it a twist and out pops the potato eye.. Just Call Me B. Miyabi 5000 FCD Shotoh, 9cm blade. This Japanese photo, also known as a vegetable knife, has a hard fine carbide steel core which gives very good cutting edge retention and sharpness. It is lightweight and nimble, and suited for cutting, peeling small fruit and vegetables. The FC61 steel core of the blade is embedded in 48 outer layers of Damascus-design steel, giving each knife its unique pattern. The cutting edge is symmetrical (not a single bevel) so it’s suitable for both right and left-handed use. The edge is Honbazuke-honed – a three-stage grinding, sharpening, and polishing process resulting in razor-like sharpness. There is no finger guard so the whole length of the cutting edge can be used. The Pakka wood handle seamlessly joins the half-bolster. The smooth join helps to prevent calluses from forming on the thumb and forefinger. For best care, it’s recommended to hand wash only. Maintain and sharpen on a whetstone, and using glass, ceramic, or stone cutting boards should be avoided as this can prematurely dull the cutting edge.

The Damascus blade is made from two premium-quality, high-carbon stainless steels. 71 alternating micro-layers of high carbon, high chromium VG10 and VG2 stainless steels are roll-forged to produce a finer grain in the steel and to give it both strength and beauty. The laminated steel is then hot forged to create the wave-inspired pattern that allows the layers to alternate along the cutting edge. During normal use, the two steels will wear at different rates creating micro serrations along the edge so that the extremely sharp edge feels sharp longer. Etched laminations in the blade reduce drag, helping food release from the blade and gliding through each cut quickly and easily. Beyond durability, the textured surface of the jute micarta handle provides a tactile experience that improves grip and control, especially in wet or slippery conditions. The full composite tang in the handle lends the knife a robust stability and provides an optimum counterweight to the blade. [This review was collected as part of a promotion.] Wow this knife is still super sharp! I have never had a knife stay sharp like this. Wish it came with a guard or blade protector but rather amazing. Feels great in the hand and easy to use. I selected a paring knife since I do a lot of prep and cutting meats. You really don't have an idea how great these knives are until you're using one. If you cook a lot I heavily recommend u save for one and treat yourself but hide it from those who destroy kitchen items. Every family has one of those. Really impressive knife!!
