Excellent pan. Heavy and sturdy. Just use a little oil or butter and nothing sticks. Very easy clean up. What I don’t like is the slanted sides. While it is 9.5 inches wide at the top, the flat area in the bottom is about 6 inches wide. I purchased this pan to replace my dedicated nonstick pan for eggs. I seasoned it twice using the potato skin, oil and salt method. It performed beautifully the first time I cooked eggs in it. For those who like cooking with cast iron but love the versatility of a clad stainless steel pan, the Viking Blue Carbon Steel 10 Inch Fry Pan is the perfect pan. Though cast iron also excels at maintaining even heating, it can take time to rise to temperature and since iron itself is so brittle, more of the material must be used to make it durable, making traditional cast iron pans larger and heavier. Add some oil to the pan and cook over medium heat for about 10 minutes. Then, let the pan cool and wipe it with paper towels and your pan is ready for use! For future maintenance, simply rinse the pan with water after use and scrub gently with a soft-bristled brush or sponge if necessary (no need for soap!). Season with vegetable oil periodically to maintain its smooth cooking surface and nonstick properties. It is not recommended to put these pans into the dishwasher as it will remove the seasoning, reduce the natural nonstick, and make the pan more susceptible to rust. Should you find rust on the pan, like natural cast iron, this can be normal. Just clean the rust off with a scrubby sponge and season the area with vegetable oil.

[This review was collected as part of a promotion.] This pan is great and very similar to a cast iron pan. What I love is that it’s made out of Nitro Carbon Steel so this pan does not rust. Cast iron rusts and it freaks me out that you still cook with a pan that rusted. So this is my new favorite. I live in a small space so not a lot of extra storage, so having things that serve multiple purposes are what work best for me . This pan not only cooks on a stove top, but also can be put in the oven and on the grill. You also can season your pan just like you would with a traditional cast iron pan.
