I purchased this knife set about a year ago and all knives cut as they did when they were brand new. I’m the regular “at home chef” that appreciates fine kitchen tools and I must say that these knives actually make cooking more fun. The edges were all very patient with me as I became acquainted with each knife and thankfully the honing steel provided works very well. I always ensure that the knives are clean and dried after EVERY use. If you’re looking to purchase a nice set and are hesitant because of the price; splurge, these are worth it. The Shun Shiranami knife series is precision forged, nature inspired, rooted in the ocean's dynamic beauty. Shun Shiranami knives combine extraordinary sharpness with superior performance. The Damascus blade is made from two premium-quality, high-carbon stainless steels. 71 alternating micro-layers of high carbon, high chromium VG10 and VG2 stainless steels are roll-forged to produce a finer grain in the steel and to give it both strength and beauty. The laminated steel is then hot forged to create the wave-inspired pattern that allows the layers to alternate along the cutting edge. During normal use, the two steels will wear at different rates creating micro serrations along the edge so that the extremely sharp edge feels sharp longer. Knife cuts as expected. Japanese characters in the logo rusted within about 4 uses despite wash and dry after every use. Interstinly the word "shun" next to it is unafected. I suspect the factory electrochem etch for the japanese characters was faulty (to much current, not passivated adequatley afterward).
