For those who like cooking with cast iron but love the versatility of a clad stainless steel pan, the Viking Blue Carbon Steel 10 Inch Fry Pan is the perfect pan. Featuring a 12-inch size for added versatility, this fry pan is made of carbon steel, an alloy that is a combination of iron and carbon. The “blue” in “blue carbon steel” references a heat treatment process to help resist rust and corrosion, a nuisance that can plague traditional cast iron pans. Season with vegetable oil periodically to maintain its smooth cooking surface and nonstick properties. It is not recommended to put these pans into the dishwasher as it will remove the seasoning, reduce the natural nonstick, and make the pan more susceptible to rust. Should you find rust on the pan, like natural cast iron, this can be normal. Just clean the rust off with a scrubby sponge and season the area with vegetable oil.

I love these pans! I bought them during a sale for a little over $100 and I must note they are incredibly well made, I cook over a gas stove and love the length of the secure handles! [This review was collected as part of a promotion.] This pan is great and very similar to a cast iron pan. What I love is that it’s made out of Nitro Carbon Steel so this pan does not rust. Cast iron rusts and it freaks me out that you still cook with a pan that rusted. So this is my new favorite. I live in a small space so not a lot of extra storage, so having things that serve multiple purposes are what work best for me . This pan not only cooks on a stove top, but also can be put in the oven and on the grill. You also can season your pan just like you would with a traditional cast iron pan. Since receiving this pan I’ve already gotten rid of a bunch of other type pans and oven stuff, which has freed up space and no longer need. A definite must in your kitchen.. Anonymous. Very pleased so far. I am pretty good with cast iron use and seasoning. There are similarities and differences. The steel uses even less heat and is up to temp very quickly. It also cools fairly quickly which can be handy. I've not mastered it yet but am using it as much as possible. I seasoned three times and used the pan a bit.
