I can say that the pan seems very sturdy, well made, does heat quickly as stated in the advertising, and so far nothing sticks (fried chicken & potatoes, pancakes, reheated food). I did a ridiculous amount of research before buying these GreenPan GP5 pans, and I’m happy to say they were worth it. Eggs slide around like they’re on ice, food cooks evenly on my gas stove, and cleanup takes about 10 seconds. The real test? Someone in my house used a fork instead of a spatula and the pan survived without a meltdown. Very pleased so far. I am pretty good with cast iron use and seasoning. There are similarities and differences. The steel uses even less heat and is up to temp very quickly. It also cools fairly quickly which can be handy. I've not mastered it yet but am using it as much as possible. I seasoned three times and used the pan a bit.
