For those who like cooking with cast iron but love the versatility of a clad stainless steel pan, the Viking Blue Carbon Steel 10 Inch Fry Pan is the perfect pan. Add some oil to the pan and cook over medium heat for about 10 minutes. Then, let the pan cool and wipe it with paper towels and your pan is ready for use! For future maintenance, simply rinse the pan with water after use and scrub gently with a soft-bristled brush or sponge if necessary (no need for soap!). Season with vegetable oil periodically to maintain its smooth cooking surface and nonstick properties. It is not recommended to put these pans into the dishwasher as it will remove the seasoning, reduce the natural nonstick, and make the pan more susceptible to rust. Should you find rust on the pan, like natural cast iron, this can be normal. Just clean the rust off with a scrubby sponge and season the area with vegetable oil.

I love these pans! I bought them during a sale for a little over $100 and I must note they are incredibly well made, I cook over a gas stove and love the length of the secure handles! Very pleased so far. I am pretty good with cast iron use and seasoning. There are similarities and differences. The steel uses even less heat and is up to temp very quickly. It also cools fairly quickly which can be handy. I've not mastered it yet but am using it as much as possible. I seasoned three times and used the pan a bit.
