For those who like cooking with cast iron but love the versatility of a clad stainless steel pan, the Viking Blue Carbon Steel 10 Inch Fry Pan is the perfect pan. This, for me, is the perfect in-between fit because I like temperature control and our All-Clad pans stay hot for a pretty long time. This pan, on the other hand, is very responsive but still retains heat, so it hits the sweet spot in terms of size (not splashing all over the counter because the pan is pretty big), weight (because it feels a lot lighter than our equivalent All-Clad Copper Core), and responsiveness (in terms of turning down the heat or adjusting up and down as you're cooking multiple items in a frying pan). [This review was collected as part of a promotion.] This pan is great and very similar to a cast iron pan. What I love is that it’s made out of Nitro Carbon Steel so this pan does not rust. Cast iron rusts and it freaks me out that you still cook with a pan that rusted. So this is my new favorite. I live in a small space so not a lot of extra storage, so having things that serve multiple purposes are what work best for me . This pan not only cooks on a stove top, but also can be put in the oven and on the grill. You also can season your pan just like you would with a traditional cast iron pan. Very pleased so far. I am pretty good with cast iron use and seasoning. There are similarities and differences. The steel uses even less heat and is up to temp very quickly. It also cools fairly quickly which can be handy. I've not mastered it yet but am using it as much as possible. I seasoned three times and used the pan a bit.
