The one thing I was worried about was the weight of these pans but I'm coming from an All-Clad copper-core set and these are way heavier than the Heston. I use it to cook on the stove top and convection. It cooks evenly and it's durable yet isn't so heavy that it's easier to use than any other cookware I've had in the past. One feature that I really love is the design of the handles, lid and overall look of the cookware is so nice that I am happy to put it directly on the serving board or the table. Wrote to them to say why doesn’t handle fold over when lid on- would only have needed a 5mm rise on hinge then it would have been perfect for tighter ovens with lid on and handle folded.
