Miyabi moves one step closer to perfection with Kaizen II – Japanese for “improvement” or "change for the better." The Kaizen II collection boasts traditional Japanese craftsmanship combined with the best hardening technology and beautiful modern design. The core, forged from resilient FC61 super steel, is protected by a stunning 48 layers of stainless steel. And Miyabi Kaizen II knives are as beautiful as they are functional. The blades’ gorgeous flower Damascus pattern is dramatically darkened through acid dipping. The double Friodur® ice-hardened blade makes for improved corrosion resistance and astonishing durability. Artisans hand-hone the blades using the venerable four-step Honbazuke method. This fine attention to detail translates into a work of art that is the ultimate in precision cutting. The blade is balanced by a substantial D-shaped handle made of black Pakkawood. Effortless to hold, the classic Japanese “D”-shaped handle offers a comfortable grip for stress-free cutting. This striking handle truly matches the caliber of the blade. Handcrafted in Seki, Japan, a city renowned for its highest quality cutlery production.

Sharp! Sharp! This is a very lightweight knife that is perfect for dicing and cutting a variety of things! The texture is cool. The handle is not smooth and the blade itself looks industrial - does not match the other KAI series from Shun, but this is a great knife! Packaged perfectly and safely. Get it and enjoy!. Kj. The Japanese vegetable knife: extremely versatile and suitable for tasks such as cutting, dicing or chopping. Its shape is reminiscent of a cleaver but should not be confused with it as a Nakiri is not suitable for rough tasks (such as splitting bones). The very sharp and finely ground blade is more designed to prep vegetables, herbs and fruit very quickly and finely. The dimpled edge of the knife (slight depressions in the blade that allow small pockets of air to form) prevents ingredients from sticking.
This Wüsthof knife is perfect, easily will last 20 years. This butcher style knife is perfect and sharp enough to cut through anything deep.. Darius. Flint, MI. Fri Mar 17 2023

I purchased this knife set about a year ago and all knives cut as they did when they were brand new. I’m the regular “at home chef” that appreciates fine kitchen tools and I must say that these knives actually make cooking more fun. The edges were all very patient with me as I became acquainted with each knife and thankfully the honing steel provided works very well. I always ensure that the knives are clean and dried after EVERY use. If you’re looking to purchase a nice set and are hesitant because of the price; splurge, these are worth it. The only problem is that I don’t NEED any of the other beautiful knives that Shun makes; but I’ll buy them anyway. Cheers and Happy Cooking. Christopher. Fri Jun 21 2024

The Shun Shiranami knife series is precision forged, nature inspired, rooted in the ocean's dynamic beauty. Shun Shiranami knives combine extraordinary sharpness with superior performance. The Damascus blade is made from two premium-quality, high-carbon stainless steels. 71 alternating micro-layers of high carbon, high chromium VG10 and VG2 stainless steels are roll-forged to produce a finer grain in the steel and to give it both strength and beauty. The laminated steel is then hot forged to create the wave-inspired pattern that allows the layers to alternate along the cutting edge. During normal use, the two steels will wear at different rates creating micro serrations along the edge so that the extremely sharp edge feels sharp longer. Etched laminations in the blade reduce drag, helping food release from the blade and gliding through each cut quickly and easily. Beyond durability, the textured surface of the jute micarta handle provides a tactile experience that improves grip and control, especially in wet or slippery conditions. The full composite tang in the handle lends the knife a robust stability and provides an optimum counterweight to the blade. Shiranami, meaning ""white-capped wave"" in Japanese, reflects the knife's stunning blade pattern, featuring an exceptionally sharp blade edge and a fine, thin mid-blade for ease of slicing, this series sets a new standard in cutting performance and beauty. All Shun Shiranami knives are made in Seki, Japan.
[This review was collected as part of a promotion.] This knife is amazing! First, it can actually cut paper. Slices it like butter. This is now my go to knife. It’s comfortable in my hands. Easy to clean. I feel like it’s definitely going to last awhile and i haven’t cut anything with it that it didn’t easily slice through.. Victoriaw. Fri May 22 2026
