This pan is amazing. I'm not great at cooking with stainless steel but I can tell it's definitely easier release than other's I've tried with. It's feels heavy and durable in hand, and I had an existing lid that fits this universal 9.5in diameter, so it's not a big deal that it doesn't come with it's own lid. (My Demeyere Sautese lid fits it perfectly too). I've made lots of sauces with this--I wanted something that could stand up against a metal whisk without worrying about scraping off any coating.. The Demeyere Belgian Steel Frying Pan is an excellent cooking utensil. The handle is long and stays cool so handling the pan is easy and safe. I do use coconut oil for frying eggs at middle stove temperatures with great results and a Silicon spatula to preserve the stainless steel surface.
