I had purchased an 8-inch GreenPan from Wayfair previously. I recently fried tofu in that pan. Frying tofu in a stainless steel or cast iron pan was difficult because the tofu sticks too much. It was easy in the GreenPan, and cleanup was no problem. I decided I needed a bigger GreenPan. The price for the 10-inch and 12-inch set was a bargain - just $20 more than the 12-inch pan along. We have a gas range, which seems to heat up most handles and utensils. With the GreenPan, the handle stays relatively cool. I was actually sent the wrong size pan but Fissler fixed the issue quickly. It is my first time buying a stainless steel pan instead of non-stick. I am impressed and wonder why I didn't use one before! As long as you follow instructions, even salmon fillets won't stick to the pan.
