ZWILLING J.A. Henckels
ZWILLING Pro is the most user-friendly knife available to the market. The unique blade shape and ergonomic bolster are the result of years of experience in knife making, and the rigorous study of how knives are used. A unique curved bolster supports the professional pinch grip, with the thumb and index finger on the blade, for safe cutting and less fatigue. The blade was redesigned with a broader curve in the front to facilitate the rocking motion of Western cutting, while the straight back is ideal for the Asian chopping motion. The full length of the blade can be used when cutting. It can be sharpened from bolster to tip. It was designed in Italy by Matteo Thun and made in Germany by ZWILLING J.A. Henckels. This company sets the standard for exceptional cutlery worldwide. The ZWILLING Pro rocking santoku is a functional hybrid between traditional Japanese and Western-style blades.
Very sharp knife. Nice feel in the hands. Still getting used to the rocking aspect as sometimes the back side/ bottom of the cut hasn’t cut all the way through. I bought the knife to get clearance for my knuckles when cutting and it has done that.. Peggy H. Eastern Ontario Canada. Thu Apr 16 2026

Miyabi 5000 FCD Santoku, 18cm blade length. This Japanese santoku has a hard fine carbide steel core for very good cutting edge retention and sharpness. Santoku translates as "Three Virtues", these being meat, fish, and vegetables. The flat cutting edge lends itself to a chopping motion rather than the rocking cutting movement of European chef's knives. The blade core is surrounded by 48 outer layers of steel which make up the unique Damascus-design pattern on the blade. The cutting edge is Honbazuke-honed and symmetrical (not single bevel), so can be used by those both right and left-handed. There is no finger guard so the whole length of the cutting edge can be used. The handle and half-bolster join seamlessly for comfortable use. The smooth surface helps to prevent the formation of calluses on the thumb and forefinger. Hand wash only for the best care and maintain and sharpen using a whetstone. We’d recommend using a wooden chopping board rather than glass, ceramic, or stone boards as these will dull the cutting edge.
This is my first santoku knife and first miyabi brand knife but man did it impress! It is super sharp out of the box. Its lightweight but making cutting a breeze!. Eryka. Fri Oct 16 2020

ZWILLING J.A. Henckels
The ZWILLING Bob Kramer puts precision in the palm of your hand. This all-purpose Asian-style knife features a relatively straight edge from heel to tip which supports the Japanese push cut. Santoku means three virtues and is named as such because it can be used for meat, fish, and vegetables. These exceptionally durable knives are made with an SG2 super-steel core and are hand-finished using a traditional three-step process. The cryogenic ice-hardened, 11° angle blade offers scalpel-like sharpness and will stay sharper, longer. Featuring an exquisite 101-layer, deep-etched chevron Damascus pattern, these revolutionary knives are true works of art. The lighter weight provides increased nimbleness, ergonomics, and comfort while maintaining strength and balance. The white, linen micarta handle resists wear, even after prolonged use. And the signature decorative center pin is handcrafted by Bob Kramer. Contemporary and elegant, ZWILLING Bob Kramer knives are an indispensable addition to any kitchen.

Global Knives
Global's greatest endorsement comes from its competitors. As a reaction to Global's success, kitchen knives are evolving. All major knife manufacturers continue to introduce new knives adopting more and more of Global's revolutionary features. Even manufacturers of those black-handled, three riveted, full bolstered, heavy, beveled-edge knives do not believe in their product anymore. Why should you? Global has a razor-sharp straight edge sharpened by hand at a 15% angle. Thinner blades for lighter weight give you more agility with less fatigue. Perfect balance using a weighted hollow handle. No bolster design allows for full edge use and full-blade sharpening. All stainless steel construction with slip-free handle.
These knives are a must for any chef who chops/dices/minces. It is like cutting through warm butter.. Seri. VA. Tue May 05 2026

Due Cigni Americas
The latest blade from the design of Due Cigni’s award-winning Coquus line, the knife design draws its roots from Japanese culinary arts to create a peerless experience in the kitchen. Forged from steel and reinforced with titanium rivets, the blade’s unique slanted tip is optimized for weight equilibrium from point to heel for perfect cuts, every time. With its rich wood handle providing a natural ergonomic grip, the knife exceeds in beauty and utility. For an unrivaled combination of elegance and aptitude, the knife is clearly a cut above.

The Shun Shiranami knife series is precision forged, nature inspired, rooted in the ocean's dynamic beauty. Shun Shiranami knives combine extraordinary sharpness with superior performance. The Damascus blade is made from two premium-quality, high-carbon stainless steels. 71 alternating micro-layers of high carbon, high chromium VG10 and VG2 stainless steels are roll-forged to produce a finer grain in the steel and to give it both strength and beauty. The laminated steel is then hot forged to create the wave-inspired pattern that allows the layers to alternate along the cutting edge. During normal use, the two steels will wear at different rates creating micro serrations along the edge so that the extremely sharp edge feels sharp longer. Etched laminations in the blade reduce drag, helping food release from the blade and gliding through each cut quickly and easily. Beyond durability, the textured surface of the jute micarta handle provides a tactile experience that improves grip and control, especially in wet or slippery conditions. The full composite tang in the handle lends the knife a robust stability and provides an optimum counterweight to the blade. Shiranami, meaning ""white-capped wave"" in Japanese, reflects the knife's stunning blade pattern, featuring an exceptionally sharp blade edge and a fine, thin mid-blade for ease of slicing, this series sets a new standard in cutting performance and beauty. All Shun Shiranami knives are made in Seki, Japan.
