It’s a sturdy knife created for just about everything in the kitchen, but most especially for chopping, slicing, and dicing vegetables. The shape is uniquely suited to two-handed cuts through fruits and vegetables with tough rinds, such as watermelon and winter squash. The Kramer by Zwilling Euroline stainless steel Damascus Collection features stainless steel blades made to their exacting standards, maximizing curves, balance, and utility. These knives are hand-finished with a traditional 3-step process by skilled Japanese artisans. Global Sai Knives follow the same tradition as Classic Global Knives, made in the same fashion by skilled Japanese craftsmen in Yoshikin's factory in Japan. The handle design is entirely new and incorporates an ergonomic thumb rest to ease the cutting motion. The blades are crafted with a 3-layer construction using the special Cromova 18 Sanso material, sandwiched between two layers of softer SUS410 stainless steel material. The blades are honed to a fine edge to give a superb cutting performance which helps to protect the blade against chipping, rusting, and staining. A new hammered finish is applied to the sides of the blade that create air pockets, resulting in a better release of food being cut, giving the blade nonstick properties. Handcrafted in Japan using artisanal techniques with modern technology in the tradition of the samurai sword.

I purchased this knife set about a year ago and all knives cut as they did when they were brand new. I’m the regular “at home chef” that appreciates fine kitchen tools and I must say that these knives actually make cooking more fun. The edges were all very patient with me as I became acquainted with each knife and thankfully the honing steel provided works very well. I always ensure that the knives are clean and dried after EVERY use. If you’re looking to purchase a nice set and are hesitant because of the price; splurge, these are worth it. The Shun Shiranami knife series is precision forged, nature inspired, rooted in the ocean's dynamic beauty. Shun Shiranami knives combine extraordinary sharpness with superior performance. The Damascus blade is made from two premium-quality, high-carbon stainless steels. 71 alternating micro-layers of high carbon, high chromium VG10 and VG2 stainless steels are roll-forged to produce a finer grain in the steel and to give it both strength and beauty. The laminated steel is then hot forged to create the wave-inspired pattern that allows the layers to alternate along the cutting edge. During normal use, the two steels will wear at different rates creating micro serrations along the edge so that the extremely sharp edge feels sharp longer. Etched laminations in the blade reduce drag, helping food release from the blade and gliding through each cut quickly and easily. Beyond durability, the textured surface of the jute micarta handle provides a tactile experience that improves grip and control, especially in wet or slippery conditions.
