There isnt enough I can say about this knife. It cuts through vegetables and fruit like they are butter cut thin pieces of fruitveggies is a breeze with this nakiri.. Anonymous. Mon Aug 28 2023

The Japanese vegetable knife: extremely versatile and suitable for tasks such as cutting, dicing or chopping. Its shape is reminiscent of a cleaver but should not be confused with it as a Nakiri is not suitable for rough tasks (such as splitting bones). The very sharp and finely ground blade is more designed to prep vegetables, herbs and fruit very quickly and finely. The dimpled edge of the knife (slight depressions in the blade that allow small pockets of air to form) prevents ingredients from sticking.
My chef friend told me to purchase these and they are great!. Jill S.. Tue Jul 21 2026

Global Knives
The Global Sai Nakiri Knife combines the features of a chef's knife with the versatility of a vegetable cleaver. Use for mincing, slicing, and dicing vegetables for stir-fry, salads, soups, and more. Global Sai Knives follow the same tradition as Classic Global Knives, made in the same fashion by skilled Japanese craftsmen in Yoshikin's factory in Japan. The handle design is entirely new and incorporates an ergonomic thumb rest to ease the cutting motion. The blades are crafted with a 3-layer construction using the special Cromova 18 Sanso material, sandwiched between two layers of softer SUS410 stainless steel material. The blades are honed to a fine edge to give a superb cutting performance which helps to protect the blade against chipping, rusting, and staining. A new hammered finish is applied to the sides of the blade that create air pockets, resulting in a better release of food being cut, giving the blade nonstick properties. Handcrafted in Japan using artisanal techniques with modern technology in the tradition of the samurai sword.
