I bought these to replace a 10 year old set of Sabatier from bb& beyond. The primary thing I was looking for was non serrated steak knives. These knives are sharp right from the box. I took a piece of printing paper and held it by the edge and used a steak knife to slice it. The knife sliced cleanly through like a razor blade. The rest of the set feel sturdy and with the German steel I feel that this will be a great set.
