Like all my Wusthof knives, the steak knives perform beautifully -- they cut through meat effortlessly with the precision of a surgeon's scalpel, and they fit comfortably in the hand. (And, as I do with all my knives, I touch up the edge of my steak knives with the honing steel after every use, maintaining that factory-sharp edge). I waited too long to pull the plug on obtaining good knives. I'll have one more to buy, the next size up from this one so I don't have to use the chef knife or this knife for cutting a large apple. They are great to handle, very sharp, and obviously well made. Glad I didn't keep waiting. My other knife was cheap and old and I couldn't sharpen it anymore. Very happy, but also now really paying attention because it is extremely sharp. I cut a lot of raw ginger and sometimes the knife would slip. I don't want that with this one.
