I bought these to replace a 10 year old set of Sabatier from bb& beyond. The primary thing I was looking for was non serrated steak knives. These knives are sharp right from the box. I took a piece of printing paper and held it by the edge and used a steak knife to slice it. The knife sliced cleanly through like a razor blade. The rest of the set feel sturdy and with the German steel I feel that this will be a great set. The fact that they tell you the sharpening bevel is also great so there is no guessing when it's time to true up the blades. I feel these knives are a great value for household kitchens.. Anonymous. This set is the most user-friendly knife. A unique curved bolster supports the professional pinch grip with the thumb and index finger on the blade, for safe cutting and less fatigue. The chef's knife blade was redesigned with a broader curve in the front to facilitate the rocking motion of Zwilling JA Henckelsstern cutting, while the straight back is ideal for the Asian chopping motion. The full length of the blade can be used when cutting and can be sharpened from bolster to tip.

The Miyabi Black 5000MCD is a true work of art. The blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. This results in an exceptionally sharp and lasting edge. The blade is wrapped in 132 additional layers of steel, resulting in a beautiful flower Damascus pattern. The handle of the Miyabi Black series is made from unique wood, black ash. The grain and color of the black ash contrast with the Damascus of the blade.
