The Performer knife series consists of two Cook’s Knives (16 cm and 20 cm), a Santoku and a Paring Knife. Wüsthof is the first knife manufacturer to offer black, fully forged, DLC-coated knives. The diamond-like carbon coating was developed to withstand the toughest conditions: the amorphous carbon layer, just a few micrometres thick, increases the surface hardness of our Wüsthof blades from 58 to a unique 104 Rockwell. This makes them resistant to acids, alkalis, extreme temperatures and general wear and tear – even scratches don't stand a chance. This knife was an addition to my other Wusthoff Santoku Knife. Both are what Inuse for almost everything unless I need a long skinny blade. I like the smaller handle on this knife a little better than the standard and I love the look.. Gordon S.. Mon Mar 16 2026

Nakiri is simply Japanese for a vegetable knife. Kanso is a design principle based on zen philosophy. Which means “simplicity,” but simplicity that is achieved by eliminating the non-essential. In Kanto, QKA/Shun took away anything that doesn’t matter and kept everything that does: high-performance steel, razor-sharp edge, perfect balance, and precision cutting control. The steel is Japanese AUS10A—highly refined, high carbon, vanadium stainless steel that takes a razor-sharp edge and holds it longer. Kanso's Heritage finish hides scratches and gives Kanso a rustic look that just improves with age. The handle is made of a wood called Tagayasan or wenge, which is sometimes known in Japan as “iron sword wood.” the handle contouring enables an easy chef's grip. Full tang construction provides strength, balance, and easy cutting control. Like all Shun knives, Kanso is sharpened to a 16° cutting angle on each side to cut cleanly and help preserve food’s freshness and best taste.
Sharp! Sharp! This is a very lightweight knife that is perfect for dicing and cutting a variety of things! The texture is cool. I have a lot of high- end knives and was debating on pulling the trigger on a Yani since I'm not a sushi chef or a pro but I've been mesmerized by this knife for a couple years. I'm so happy I got it, it's a work of art! I've used it to fillet a few fish I've caught and for slicing roasts and steaks, haven't noticed it " steering" me due to single bevel, it's so sharp and has perfect weight. Not a laser like a Yu so I've got more confidence if I'm cutting a rib roast or something with a bone-in. Beautiful work of functional art. Haven't had to sharpen yet but will definately do it myself, I'm confident in my ability to sharpen and not scratch it. It is one fine tool. BTW, it's not my most expensive knife.
