Definitely not non-stick, in my opinion, but it works perfectly for baked eggs, mac n cheese, veggies, au gratin potatoes etc... as long as I grease the pan. I tried it a couple times stove top, to sweat/season the veggies before baking in the egg mixture or just veggies as a side dish before baking them, and it was just ok. Forget caramelizing, at least on my gas burner, on stove top it tends to singe or get brown before the veggies do and seems to cook unevenly in the center of the pan vs the sides. I still like it, because it works for what I mainly bought it for which is baked eggs and such...I needed something I could stick under my broiler really quick. You may not want this pan if your living grease and oil free. But if you want stainless steel to broil the top of your eggs or strata or whatever then this may work for you. I wasn't able to get some of the burns off of the enamel, I tried it oil free on stove top once with veggies and it didn't work for me, but I noticed it worked for someone else. My heat could have been too high...different stove top, cooking something else, better cook, idk. All that being said, it is still a pretty little sauté pan to use for baking.
