I had purchased an 8-inch GreenPan from Wayfair previously. I recently fried tofu in that pan. Frying tofu in a stainless steel or cast iron pan was difficult because the tofu sticks too much. It was easy in the GreenPan, and cleanup was no problem. I decided I needed a bigger GreenPan. The price for the 10-inch and 12-inch set was a bargain - just $20 more than the 12-inch pan along. We have a gas range, which seems to heat up most handles and utensils. With the GreenPan, the handle stays relatively cool. I just purchased 2 sets of this Caphalon Cookware as gifts for my daughters. I have owned the same set for over 17 years and it is still going strong! Caphalon sells 2 space saver sets (a lower priced version and this set which is almost double the price). The difference is on the handle of each lid. The lower price version has a rubber handle that is not suitable for use in the oven. The lids on this (higher end) set have metal handles and can be used in the oven. Keep that in mind if you are considering the lower priced set as it is not as versatile. I love to cook and this has been my favorite set of cookware ever! I ended up having to purchase this set elsewhere due to the delay in initial stated delivery but wanted to share my review of this cookware set. We have an induction stove top. We’ve been using for 2 weeks now. It is amazing build quality. They are hefty as they should be -less chance of warping. The non stick ceramic lends to not having to use ANY oils/butter -unless called for in the recipe itself. The clean up is FLAWLESS.
