I am learning as I go. Buying pans and realized this was the better of the Demeyere line, depending on whom you spoke to. I am pleased about that because I am buying very slowly, on sale and do not mind mixing brands. I could not seem to find a set I liked with the quality and what I wanted in it. I am delighted with the Cuisinart Multiclad Pro Triple Ply Saucepan with Cover! It is a good, heavy pan that holds heat well and cleans up well. After burning the inexpensive pots I previously used to make oatmeal each morning, I replaced them with the Cuisinart and the difference is marked. I have not used it on heat higher than the medium setting on my gas stove and I am using only wooden utensils inside the pot. It has cooked beautifully with no hot spots.
