I bought these to replace a 10 year old set of Sabatier from bb& beyond. The primary thing I was looking for was non serrated steak knives. These knives are sharp right from the box. I took a piece of printing paper and held it by the edge and used a steak knife to slice it. The knife sliced cleanly through like a razor blade. The rest of the set feel sturdy and with the German steel I feel that this will be a great set. The fact that they tell you the sharpening bevel is also great so there is no guessing when it's time to true up the blades. I feel these knives are a great value for household kitchens.. Anonymous. Even the best knife will lose its initial sharpness during the course of time. Using sharpening steel each time you use your knives will keep the edge aligned, resulting in a sharper, safer knife.
