Particularly useful for peeling and cleaning rounded vegetables and fruit, the WÜSTHOF Ikon 2.75" in Peeling Knife—also known as a Turning or Tourne Knife—features a short, bird’s-beak curved blade that quickly peels produce like potatoes or apples while preserving vitamins just under the skin; its straight edge enables precise cuts, making it ideal for hollowing out and decorating fruit and vegetables.

Neat knife for peeling. I know I could use any of my other knives to get the job done but this one makes it a little fun and easier. Little pricey but you get what you pay for. Melanie C.. Mon Jul 01 2024

WÜSTHOF’s Ikon Series- Handles made from durable African Blackwood, one of the hardest woods in the world. The utility knife is smaller than a chef's knife but larger than a paring knife, making it the perfect knife for a magnitude of tasks. A utility knife is much like a versatile paring knife and is perfect for mincing shallots, onions, and herbs as well as cutting vegetables or small meats.

Good all around kitchen knife. Love the Ikon grade. Beautiful handle. Super sharp edge on the blade.. Thomas C.. Thu Oct 09 2025

Smaller than a chef's knife and larger than a paring knife, the WÜSTHOF Ikon 4.5" Utility Knife is the perfect blade for a myriad of tasks. Think of this handy utility knife as a slightly longer, just-as-versatile paring knife with an aptitude for chopping shallots, onions, herbs, tender vegetables, and smaller cuts of meat. Forged from a single piece of specially tempered WÜSTHOF steel in Solingen, Germany (the cutlery capital of the world) and fitted with ergonomic handles made from sustainably grown, water-resistant African Blackwood, the Ikon series is all about luxury craftsmanship. The final edge work of each blade is honed by hand by one of WÜSTHOF's expert knife artisans, meaning every exquisite knife in this series is also a prepping, plating, and serving workhorse.

A paring knife is the second-most important knife in the kitchen (after a chef’s knife), and the WÜSTHOF Ikon 3" Flat Cut Paring Knife proves it: a small, narrow blade that’s easy to handle for trimming, slicing, and peeling small produce like herbs, strawberries, and garlic cloves, with a flat edge that maintains more contact with the cutting board for precise, agile control.

The all-rounder: for mincing, chopping, or cutting meat, fish, fruit, and vegetables. The Chef's Knife is an active participant in many kitchen tasks, makes food prepping pleasurable, and is part of every professional and home cook’s basic equipment. The half bolster, the junction between handle and blade, reduces the weight of the knife, making it easier to handle. It also allows the entire blade to be sharpened more easily.
