So obsessed with my new Viking professional aluminum stainless steel sauté pans!! They are by far the nicest pans I’ve ever used. I made sure to season them first and they cleaned up like a dream. Fantastic! Still not showing any signs of sticking. Been hand washing only. Wrote to them to say why doesn’t handle fold over when lid on- would only have needed a 5mm rise on hinge then it would have been perfect for tighter ovens with lid on and handle folded.
