Heats up so well and, so long as you season the pieces per the directions when you first get them, everything slides right out and cooks beautifully. The exterior layer is copper for exceptional temperature control. The unexposed core is stainless steel and aluminum to transfer the heat quickly and evenly throughout the pan. The interior cooking surface is a non-reactive surgical grade 304 stainless steel. The benefit of the stainless steel cooking surface is that it will not react with the acids in your food or impart a metal taste to your food. To make the pan induction capable, we remove the copper layer from the bottom of the pan, exposing the stainless steel layer.

I ended up having to purchase this set elsewhere due to the delay in initial stated delivery but wanted to share my review of this cookware set. We have an induction stove top. We’ve been using for 2 weeks now. It is amazing build quality. They are hefty as they should be -less chance of warping. The non stick ceramic lends to not having to use ANY oils/butter -unless called for in the recipe itself. The clean up is FLAWLESS. This set are amazing they heat up even and quickly on my induction stove. Love the weight and the clean up is nice. Just make sure to let the pans cool down before cleaning . Great quality. We purchased these as the propane flames (natural gas not available in this part of the state!) made a sooty mess on the bottom of our old pots & pans.
