The benefit of the stainless steel cooking surface is that it will not react with the acids in your food or impart a metal taste to your food. To make the pan induction capable, we remove the copper layer from the bottom of the pan, exposing the stainless steel layer.

These pots are great so far. They’re very sturdy and well made. I wash them by hand to keep them looking new. The handles do get hot and that degree varies by size of the pot. That was a bit disappointing, especially since the description says that they stay cool. The sale price was really good so I decided to upgrade my old pots that I had for years. I had purchased an 8-inch GreenPan from Wayfair previously. I recently fried tofu in that pan. Frying tofu in a stainless steel or cast iron pan was difficult because the tofu sticks too much. It was easy in the GreenPan, and cleanup was no problem. I decided I needed a bigger GreenPan. The price for the 10-inch and 12-inch set was a bargain - just $20 more than the 12-inch pan along. We have a gas range, which seems to heat up most handles and utensils. With the GreenPan, the handle stays relatively cool.
