Smoothest surface imaginable. The thing feels slick even when there’s no oil on it. I got the machined cast-iron first looking for a no fuss pan for my eggs, and that’s stuck. This thing is perfect.

The pan cooks evenly and cleans up with a little detergent and water, no scrubbing needed. It's also lightweight and easy to manage.
