The WÜSTHOF Universal Hand-Held Knife Sharpener can be adjusted to sharpen either standard or Asian-style blades. Each setting provides two stages of sharpening for a total of four stages. First, use the carbide sharpening slot to smooth irregularities and refine the angle of the blade edge.
