I used my pot for the first time this past Christmas Eve to make an oxtail stew. I have always placed my Staub pots in a cold oven and set it to 350 to bring them slowly up to temperature before putting them on the stovetop to sear meat. This pot performed like the others, flawlessly. The oxtails were seared in two batches, with each piece needing to turned over and then sideways to ensure even browning and a crust on all sides. Everything released easily and there was a nice fond at the bottom. The pot then handled the mirepoix and the deglazing with red wine before returning to the oven. Here is where I offer some caution: this pot is quite heavy when empty, once it is filled partway with food and liquid it is very heavy and very hot. I had no incidents due to weight, but please be careful moving it when full and hot. All in all after 3 hours in the oven I let it cool on the stove top until I could pick it up barehanded and put the whole pot in refrigerator overnight. Back into the cold oven the next day - Christmas Day - to heat up slowly at 300 degrees for a couple of hours. I sealed the pot with heavy duty aluminum foil and left the grill pan lid out of it. Perfection. Later for cleanup, like with the others, it is so pleasurable to hand wash. You would have to TRY to mess these pots up. Seriously, just treat them as you would any expensive, high performance object, a little Dawn and nothing harsher than a blue scrubbing sponge. I finish it up with a bit of Barkeepers Friend and they are pristine. Staub.
