The "Bonbon Chouval" (Horse Biscuit in Creole) was originally a traditional pastry from the island of Martinique. Carelessly shaped like a horse, the biscuits were sold in the village markets during the patronal feast. The horse is also a recall of the island's cultural variety, Amerindians were the only inhabitants on the land and had no notion of cavalry before the conquistadors first brought them.
