These knives are a top-of-the-line collection of stainless kitchen cutlery for the professional or serious home chef. The blades are individually hammered, ice-tempered, and hardened to Rockwell from C58° to C59°. The blade transitions smoothly and seamlessly into the ergonomically shaped stainless handle.
